My hubby, and littlest babe drove out of town this past weekend, leaving behind our 4 others in our hometown. We were headed to a special place for a class on wild edibles! I'll share more detail of what we learned in upcoming posts, and a little here today. The caretakers home was charming--chicken coop and all!
Did you know you can eat the blooms off the redbud tree? They actually were quite sweet--you can taste a hint of the nectar in them! Wouldn't they be beautiful on a cake!
Also, I had no idea lilac blossoms are also edible. We enjoyed cream cheese infused with morel mushrooms--this was wrapped in black forest ham inside a crepe. Then we dipped it into maple syrup.....yum! Also, we had pizza that was wonderful. The crust had cattail pollen in it--the top had sauce, melted cheese--and tons of greens from the land he had shown us and picked up. Organic, local and free! (And by the way....I NEVER thought I would say I enjoyed cattail pollen...strange!) What about putting the blossoms onto or mixed into vanilla yogurt or vanilla ice cream along with honey? Mmmmm...have to work on that one this week~

If you are interested in wild edibles--call your local extension office to find out if there are any classes going on in your area. It really is becoming quite a popular subject--all part of living off the land--using what's on hand, God's gifts to us to use.

I reallyw ould love to find out more about wild edibles. unfortunatlely, i don't know who i can contact her ein london. thanks for sharing though! it was lovely reading about the redbud blossoms and seeing those cute photos(:
