As of late, we have been diving head first into the deceptively delicious cookbook here, and enjoying every minute of it. The pictures in it are beautifully done, so it is a feast for the eyes. However, it is a fun, upbeat and informative cookbook, with TONS of great recipes. The whole idea of it is "sneaking" pureed foods into your children's regular foods, without them even knowing. It really is pure genius if you ask me! We try to have our children eat a whole food, organic diet as much as possible. I also am big on raw foods as much as we can incorporate them, due to their high vitamin and enzyme content. When I can't do that, I go for getting their nutrients in veggie form as much as possible. That's where this book comes in!
The above was our lunch yesterday---we changed it a bit from the book. Basically dipped bread slices into free-range eggs from the farm, pumpkin puree, and pumkin pie spice.....cooked on the stovetop....yum!!! On Tuesday for lunch we enjoyed the egg puffs with pureed yellow squash in them--sounds odd, but it was just as big a hit as this french toast was!
-The whole gang dove into this one head first!
I recently purchased oh, I think it was 30 or 40 pounds of organic bananas at our local Kroger. Why, you ask? Well, 2 reasons. One, is that I talked to the produce manager, and he agreed that if I bought a box of bananas he would lower the price 20 cents/pound. That made them the same price as non-organic bananas. Number two, I like having a nice stock of bananas on hand. What will I use them for?
-Our daily smoothie that my husband and I (and I often do another for the kiddos) enjoy....such as this one, or this. (I wait till they have a few brown spots, then peel, break into 3 or 4 chunks, throw in a baggie and into the freezer they go.)
-Banana/Blueberry Ice Cream--recipe here--good for breakfast, lunch or even a light supper on those "crazy" nights!
-Banana Crumb Muffins--recipe here--
-Dehydrated banana chips in my dehydrator--shown here
-Yogurt parfaits--a quick breakfast or lunch--Layer homemade or storebought yogurt, granola and banana slices, than do all layers over again. Do this in parfait glasses, and that makes it really fun!
-Lots of yummy ways to use up a whole box of bananas!
